Ingredients
- 2 cans Lakanto Cucumber Mojito Soda
- 1/4 cup fresh lime juice
- 1/4 cup thinly sliced cucumber
- 2 tablespoons fresh mint leaves, finely chopped or torn
- Lime zest, optional
Directions
- Pour the Lakanto Cucumber Mojito Soda into a measuring cup or small pitcher.
- Stir in the fresh lime juice.
- Add a few cucumber slices and mint leaves to each popsicle mold.
- Pour the soda mixture into the molds, leaving a little space at the top for expansion.
- Insert popsicle sticks and freeze for at least 6–8 hours, or overnight, until firm.
- To release, run the outside of the molds under warm water for a few seconds, then gently remove the popsicles.
