Cucumber Mojito Popsicles

Ingredients

  • 2 cans Lakanto Cucumber Mojito Soda
  • 1/4 cup fresh lime juice
  • 1/4 cup thinly sliced cucumber
  • 2 tablespoons fresh mint leaves, finely chopped or torn
  • Lime zest, optional

Directions

  1. Pour the Lakanto Cucumber Mojito Soda into a measuring cup or small pitcher.
  2. Stir in the fresh lime juice.
  3. Add a few cucumber slices and mint leaves to each popsicle mold.
  4. Pour the soda mixture into the molds, leaving a little space at the top for expansion.
  5. Insert popsicle sticks and freeze for at least 6–8 hours, or overnight, until firm.
  6. To release, run the outside of the molds under warm water for a few seconds, then gently remove the popsicles.
