Cinnamon Roll Ingredients
- 1/3 cup organic sour cream
- 1 1/2 cups Lakanto Pancake and Baking Mix
- 4 tbsp organic cream cheese, softened
- 2 large eggs
- 1 tsp organic vanilla extract
- 1/2 cup water
- 2 tbsp organic coconut oil
Filling Ingredients
- 1/2 cup Lakanto Brown Monkfruit Sweetener or Lakanto Golden Monkfruit Sweetener
- 1/2 cup softened butter
- 1 1/2 tbsp ground cinnamon
Icing Ingredients
- 4 tbsp organic cream cheese, softened
- 1 tsp organic vanilla extract
- 1/2 cup Lakanto Classic or Golden Monkfruit Sweetener
Putting Together the Cinnamon Rolls
- Mix all ingredients in dough to a large bowl until a dough is formed. If too thick, add more water.
- Remove dough and place onto parchment paper. Top with an additional sheet of parchment paper and roll out. Make sure not to roll it too thin – you don’t want any holes.
- In a separate bowl, mix together butter, sweetener, and cinnamon. Spread on top of the dough evenly.
- Next you will roll the dough. It’s going to be a bit sticky so use the parchment paper to assist you.
- Lift one end of the parchment paper slightly to allow the dough to roll over itself, lay it back flat and then roll it again, repeat this until you’ve formed a large roll.
- Use a very sharp knife and cut into 10-12 even sized rolls.
- Place the rolls into a baking dish lined with parchment paper & place into the oven at 375 degrees for 15-20 minutes.
- Remove them from the oven once they begin to brown & set them aside to cool for 5-10 minutes.
- Drizzle glaze over cooled rolls and serve warm!

I wish these recipes included the basic nutrition facts. I keep a strict record of what I’m eating these days and LOVE Lakanto products – they have the info on the packaging. The recipes don’t. :(
