Ingredients

1 cup Sugar-Free Chocolate Chips

½ cup heavy whipping cream

2/3 cup chilled heavy whipping cream

1 Tbsp Powdered Sweetener

¼ tsp pure vanilla extract

In a large microwave safe bowl, heat Chocolate Chips and ½ cup cream until the chocolate is melted and the mixture is smooth. Heat in 20 second increments, stirring well between each round. Set aside to cool to room temperature, stir occasionally.
Using the whisk attachment on a hand/stand mixer, beat 2/3 cups chilled cream with Powdered Sweetener and vanilla until stiff peaks form. Transfer the whipped cream to the fridge.
Once the chocolate has reached room temperature, fold the whipped cream into the melted chocolate using a silicone spatula. Once fully combined, transfer the mousse into individual serving dishes and chill for at least 2 hours.
Recipe Note
The colder the mousse is, the more firm it will be. If you like it softer you can leave it at room temp for about 15 minutes before serving.
Make extra whipped cream if you want to add it to the top while serving!
