Gluten-Free, Sugar Free Buttermilk Waffles

A classic breakfast staple with deep pockets to hold even more deliciousness, these waffles get beautifully golden brown and are light and fluffy. (that's the buttermilk in action) They are also perfectly sweet with no added sugar using our Classic Monkfruit Sweetener.

Fire up that waffle iron and make a batch of these babies that will smell so divine it will make everyone flock to the kitchen to eat them.

You could double the recipe and place them in a freezer bag for busy mornings. Just pop them in a toaster to reheat in a flash! 


Top with a sprinkle of our Powdered Monkfruit Sweetener, fresh berries or bananas. Or drench them in butter and the best-selling, zero sugar Maple Flavored syrup  that we all know and love. 

If you are feeling ambitious (even a tiny bit of ambition will be enough) whip up some of our Cinnamon Maple Peanut Butter using our newest flavor of syrup and our Peanut Butter Powder-sweetened with Monkfruit. This sweet & spicy topping alone is a treat but pair it with some fresh-made waffles and you have a breakfast for the champions in your life.


Ingredients to make Gluten-Free Buttermilk Waffles 

 

  • 2 cups gluten-free flour (we used Bob’s Red Mill, All-Purpose)
  • 1 tablespoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup Lakanto Classic Monkfruit Sweetener 
  • 1/2 cup buttermilk (easily make your own w/ 1 teaspoon vinegar & ½ cup any milk, let stand 5 minutes)
  • 1 cup unsweetened vanilla almond or oat milk
  • 2 eggs, beaten
  • 1/4 cup melted butter or coconut oil

Instructions to make Gluten-Free Buttermilk Waffles: 


  1. Preheat a waffle iron.

  2. In a large bowl, stir together the dry ingredients: Flour, baking powder & baking soda, salt & Lakanto Classic Monkfruit Sweetener.

  3. Make a well in the center and add the buttermilk, milk, eggs, and melted butter or oil . 

  4. Mix together just until combined with a large spoon (careful to not over mix the batter!) The batter should look lumpy.

  5. Spray the waffle iron with coconut or avocado oil spray. Pour 3/4 cup of the batter and bake until edges are golden. 

  6. Top with Cinnamon Maple Peanut Butter (recipe below), fresh bananas, blueberries & strawberries.

Serve immediately or freeze for up to 1 month 

Cinnamon Maple Peanut Butter 

¼ cup Lakanto Peanut Butter Powder

1 T water 

A pinch of sea salt

2 T Lakanto Cinnamon Maple flavored Syrup

Instructions for Cinnamon Maple Peanut Butter:

Mix Lakanto Peanut Butter Powder and 1 T water until somewhat incorporated. (mixture will be dry)  Drizzle in the Lakanto Cinnamon Maple flavored Syrup mixing as you go, to reach the desired consistency. Add the salt to taste. Delicious on top of pancakes, waffles, fresh peaches, or on oatmeal. Store in airtight jar in fridge up to one week.
