Ingredients for Keto French Toast Casserole:
- 4 slices of low carb bread (we used Franz Keto White Bread)
- 4 eggs, beaten
- 3 T Cream Cheese (optional)
- 1/2 cup heavy cream (can substitute coconut milk)
- 1/3 cup unsweetened almond milk (or any other milk)
- 1/8-1/4 cup Lakanto Classic or Golden Monkfruit Sweetener
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 3 T Cream Cheese (optional)
Ingredients for Keto French Toast Casserole topping:
- ½ cup chopped pecans or walnuts
- 1 tsp ground cinnamon
- 3 T melted butter (can sub coconut oil)
- 1 T Lakanto Brown Monkfruit Sweetener
- ½ tsp salt
Instructions for Keto French Toast Casserole:
Tear the bread into bite sized pieces and place in a prepared 9’”x11” ceramic, glass or metal baking dish, set aside. If using cream cheese, place small dollops among the bread pieces, keeping them about 1 tsp each.
Combine beaten eggs, cream, milk, Lakanto Monkfruit Sweetener, cinnamon and vanilla extract in a bowl. Mix well.
Pour mixture over bread mixture. (let sit for 30-40 minutes or keep in fridge overnight)
When you are ready to bake Keto French Toast Casserole, make the topping:
- Melt butter in bowl or glass measuring cup
- Add to melted butter, Lakanto Brown Monkfruit Sweetener, nuts & salt.
- Mix well.
- Pour over the top of the custard/bread mixture.
- Place dish in a 325° preheated oven for 25-30 minutes or until golden.
Serve immediately with Lakanto Maple Flavored Syrup or Lakanto Cinnamon Flavored Syrup, fresh berries, or Sugar Free Whipped Cream
