This recipe for Millionaire's Shortbread is a heavenly no-bake dessert with a layer of crunchy shortbread, insanely delicious caramel filling and finished with decadent and smooth chocolate.

Instructions & Ingredients for Sugar-Free & Keto Friendly-Millionaire's Shortbread:
Layer 1: Shortbread
3/4 cup Almond Flour (Finely Ground)
1/4 cup Ground Pecans
1 T Lakanto Golden Monkfruit Sweetener
2 T melted butter or coconut oil (we used coconut oil)
Stir together ingredients for the shortbread--almond flour, pecans, Golden Monkfruit Sweetener, and butter/coconut oil. Place parchment paper in a bread pan and add all ingredients, pat down into the pan.
Freeze for 12-15 minutes.
Layer 2: Caramel
3/4 cup unsweetened Almond Milk or heavy cream (makes the thickest caramel, we used almond milk)
1/3 cup Lakanto Golden Monkfruit Sweetener
1/4 cup Coconut Oil
Simmer until caramel thickens. Pour mixture onto the shortbread layer.
Freeze for 15-20 minutes.
Layer 3: Chocolate
1/4 cup Coconut Oil (Melted)
1/4 cup Cocoa Powder
2 T Lakanto Golden Monkfruit Sweetener
Mix together and pour onto the caramel layer.
Freeze for 15-20 minutes.
Slice into 2" squares or 1" strips. Makes 12 servings
Best stored covered, in refrigerator. Use within 2-3 days for best results.

What size pan do you use?
We’ve been living keto for 5-6 years now to manage my husband’s diabetes- T2 and my celiac. We use your sweeteners and especially like the golden, the newer brown, and the baking sweetener ! I appreciate and enjoy the recipes you share but wonder if you could make them easily printable ? I’m old school and MUCH prefer to work from a printed recipe !
