Sugar-Free Pumpkin Panna Cotta

Panna Cotta (Italian for "cooked cream") is an Italian dessert of sweetened cream thickened with gelatin and infused with flavors.
Our version here is spiced with pumpkin, is silky smooth and decadent. It's sweetened with Monkfruit Sweetener and has only 3 net carbs per serving. This dessert will wow the recipients. Yes, even your in-laws.
Add this to your holiday menu, whip it up on a weekday or Sunday dinner dessert.
Ingredients

1 2⁄3 cups heavy cream
- 2⁄3 cup Organic pumpkin puree

1⁄4 cup Organic Monkfruit Sweetener (can sub Classic or Golden Monkfruit Sweetener)
- 1 T gelatin powder

1 heaping tsp pumpkin pie spice, plus a pinch for garnish

2-3 drops Lakanto LIquid Monkfruit Extract, vanilla flavored (can sub 1 tsp vanilla extract)
Directions
In a saucepan, add heavy cream, pumpkin puree, Lakanto Organic Monkfruit Sweetener, and gelatin powder. Whisk ingredients until incorporated well and cook on medium heat about 6-7 minutes, stirring often.
Reduce heat to medium-low, add pumpkin pies pice and Lakanto Liquid Monkfruit or vanilla extract and continue cooking for an additional 2-3 minutes.
Remove pan from heat and allow mixture to sit at room temperature to cool slightly for 10 minutes.
- Whisk mixture thoroughly before pouring mixture into dishes. Transfer into 4 oz dishes of your choice and chill for at least 2 hours or overnight.
Top with fresh Sugar-Free Whipped Cream and garnish with a sprinkle of pumpkin pie spice
