Berry Fat Bombs are bite-sized deliciousness and are easy to make and a dream to have in the fridge or freezer when you need a quick snack. With only a few ingredients, perfect macros and only .5g of net carbs these sweet treats may become your new favorite.
Ingredients
-
½ cup cream cheese
- ¼ cup Powdered Lakanto Monkfruit Sweetener
- ¼ cup unsalted butter, softened
- ¼ cup freeze dried berries of your choice (we used strawberries)
-
1-3 drops Liquid Monkfruit Sweetener, Vanilla flavored
- Crushed freeze dried strawberries for sprinkling on top (optional)
Directions
Place all ingredients into the bowl of a stand mixer or use high speed on a hand mixer and mix well until berries are fully incorporated.
- Using a small scoop, make 1” balls on a lined cookie sheet and freeze for about 2 hours.
- After bombs are fully firm, place in airtight container and keep in fridge until ready to eat.
Recipe Note
Try dipping half of the bomb in melted Lakanto Sugar Free chocolate
Freezer storage works well too for a firm, cold Fat Bomb
Vanilla Extract can be subbed for Liquid Monkfruit Sweetner
Only have Classic Monkfruit Sweetener? No problem. Pulverize Classic in a blender and use in the place of Powdered Monkfruit Sweetener
