This tangy, finger-lickin', lip-smackin' BBQ Meatball recipe is a winner on game day, a weeknight dinner, appetizer party or a snack sesh for hungry participants.
Lakanto BBQ sauce without all the carbs and sugar combined with hearty meatballs will make this low carb, Keto friendly and a crowd favorite! You won't even miss the sugar in our cravable sauce. It's the perfect compliment.
Ingredients
-
1 pound of ground meat, your choice: beef, pork, turkey, chicken (a combo of two works well. we used beef & pork)
- 1 egg
- 2 cloves garlic, crushed or 1 tsp garlic powder
-
½ cup parmesan cheese
-
¼ teaspoon dried parsley or Italian seasoning
- ½ teaspoon onion powder or 1 tsp of finely diced onion
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon olive oil
-
1 cup Lakanto Monkfruit Sweetened BBQ Sauce (or more to your liking)
-
1 T Coconut Aminos, Worcestershire Sauce or Soy Sauce
Directions
In a large mixing bowl, add the ground meat and the parmesan cheese and mix well. Add in the onion, garlic, seasonings and egg.
Mix meat mixture well until incorporated, but do not overwork. Use a scoop to form meatballs and use wet hands to smooth them. Place them aside as you use all the meat mixture.
- Heat a skillet to medium high and add the olive oil. Turn heat down to medium and add meatballs in batches, browning on both sides. Take out meatballs and drain on paper towels.
In the same skillet (without washing) add one cup Lakanto Monkfruit Sweetened BBQ Sauce and heat on low, stirring carefully and incorporating bits of brown from bottom of pan. Add in Coconut Aminos/Soy/Worcestershire Sauce.
Place meatballs in skillet and mix to coat with sauce. Cover and let simmer for 5-7 minutes or until meatballs are cooked through. Let sit for 5-7 more minutes to let the meatballs soak up more of the BBQ sauce, then serve.
Recipe Note
*substitute your favorite ready-made frozen or fresh meatballs for homemade
*add 2 T Lakanto Brown Monkfruit Sweetener to make a sweeter sauce
*add 1 tsp of red pepper or your favorite hot sauce to give this recipe a kick
*use a slow cooker to cook meatballs in sauce on low 4-5 hours
*substitute bread crumbs for the parmesan cheese for a non-Keto version
*make a smaller, one bite meatball for a lighter appetizer
